Noch nie Stumptown tot gehört? Kein Problem. Ein schönes Rezept von Karla Hauptfür ein knackiges Brathähnchen Rezept.

1. in Pfeffermilch kochen

Pfeffermilch:

1 Tasse Milch

1 Tasse Wasser

schwarzer Pfeffer


im Topf oder einer großen Pfanne erhitzen, darin 3 große Schenkel einlegen und das ganze ca. 1 Stunde bei geringer-mittlerler Hitze kochen. Zwischendurch immer wenden.

Wenn die Keulen weich sind (die Flüssigkeit ist dann auch fast weg) aus der Pfanne nehmen, etwas abkühlen und ausdämpfen lassen, abtupfen.

2. panieren und backen

1-2 Eier mit etwas Milch glatt rühren → die Keulen darin wenden, anschließend in der Panade wenden: 

Panade: 

2 Esslöffel Mehl 

2 Esslöffel Paniermehl

mischen mit Gewürzen

Kreuzkümmel

Schwarzer Pfeffer

Chillipulver

Salz

Thymian 

Kurkuma

Und zum Schluss in Öl ausbacken (gut wenden).
