250 g Perlzwiebeln
150 g Speck
250 g kleine Champignons
30 g Butter
1 EL Tomatenmark
1.5 Prisen Zucker
1\/2 Bund glatte Petersilie<\/span><\/p>\r\n
Zwiebel sch\u00e4len und grob w\u00fcrfeln. Zwiebelw\u00fcrfel, Thymian
und Lorbeer zum H\u00e4hnchen geben, leicht salzen und pfeffern, aufkochen. Bei kleiner Hitze ca. 1 Std. schmoren lassen.
2. Inzwischen die Perlzwiebeln mit kochendem Wasser \u00fcberbr\u00fchen, sch\u00e4len. Speck in d\u00fcnne Streifen schneiden, Pilze putzen. Butter erhitzen, die Zwiebeln darin rundherum ca. 8 Min. anbraten. Speck und Pilze hinzuf\u00fcgen und weitere 5 Min. braten.
3. Kurz vor dem Servieren die H\u00e4hnchenteile aus der Sauce nehmen und zugedeckt warm halten. Die Pilzmischung mitsamt Bratensaft in die Sauce geben, Tomatenmark hinzuf\u00fcgen. Aufkochen und etwas
einkochen lassen. Die Sauce mit Salz, Pfeffer und Zuckerabschmecken. Die H\u00e4hnchenteile in die Sauce geben. Petersilie absp\u00fclen, trockensch\u00fctteln, die Bl\u00e4ttchen fein hacken und \u00fcber das H\u00e4hnchen streuen.<\/span><\/p>\r\n
